GLOBAL KNIVES


GLOBAL was founded by Minoru Tsuchida in Japan in 1985. Over the past decade GLOBAL has introduced many new knife designs, including a tomato knife and a crab/lobster knife.
Compared to conventional European knives such as J.A. HENCKELS and WUSTHOF, GLOBAL knives are made from a significantly harder alloy of steel, have a thinner blade, and can be sharpened to a more acute angle.
This makes for an extremely sharp knife which keeps its edge longer and allows for more accurate work. GLOBAL recommends sharpening with a whetstone or ceramic tool rather than an electrical grinder.
GLOBAL knives are renowned for their surprisingly light weight and balance. They have a distinctive appearance, the handle and blade being one continuous piece of metal, and having black indentations in their handles.
J.A. HENCKELS KNIVES

Henckels knives are manufactured in several different ways. TWIN Select, Four Star, Four Star II, and Professional "S" are all forged from a single piece of high carbon stainless steel, which is ice hardened to improve stain resistance. Forging is intended to produce improved cutting-edge retention, weight, balance, and reduced opportunity for metal fatigue.
TWIN Gourmet and Signature knives are stamped from a single piece of steel. Most knife blades are hand honed in order to keep a lasting edge.

The forged series also have enlarged bolsters for safety and extra balance while cutting.
Henckels International cutlery is manufactured in several different ways. The Classic and Forged Synergy series are forged to produce a heavier utensil. The Fine Edge Pro and Fine Edge Synergy models are stamped to provide for a lower cost knife.
WUSTHOF KNIVES

Pictured here is the Classic Series chef's knife, a forged knife with the traditional triple riveted polypropylene hand and a full-length tang.
The main series include Classic, Ikon (a contemporary update of the Classic series with wooden handles), Le Cordon Bleu (almost identical to the Classic series, but smaller, endorsed by Le cordon Bleu culinary school), Grand Prix, Gourmet (similar to Classic in looks, but without the bolster and stamped instead of forged); Emeril (used by the chef Emeril); and Silverpoint.
All Wüsthof knives are precision forged except for the stamped Emeril and Gourmet and laser cut Silverpoint series.
